Mac & Cheese ~ Tamara's Recipe

This is Tamara's famous Mac & cheese she makes for each potluck.

1 -16 oz box of elbow macaroni       

2 cans of cream of chicken soup

2 cups mayo (I use light mayo because it is less oily)

4 cup bag of Sharp cheddar cheese.

Salt & Pepper to taste.

 

Preheat oven 400 degrees

Cook macaroni according to directions on box. Make sure you don’t over cook it because it will cook more in the oven.

In a bowl mix soup & mayo.

Spray a large baking dish with nonstick cooking spray.

Put pasta & soup/mayo mixture into baking dish and mix well.

Add cheese and mix well. (I use at least the 4 cup bag, sometimes I put more in it, you can never have too much cheese!)

 

Bake until slightly brown on top. Usually, about 30 to 45 minutes.

 

*This is the size I make for potluck. If you just want to make it for family just ½ everything.

Taco Bean Soup ~ Alishia's Recipe

Alishia has made this for a few of the potlucks

1 lb Hamburger, browned                                                                                                  1 onion, chopped                                                                                                                   2 cans black beans, drained                                                                                                2 cans rotel, mild                                                                                                                   1 can whole kernel corn, drained                                                                                        1 can crushed/diced tomatoes                                                                                            1 pkg. taco seasoning mix                                                                                                    1 pkg. Hidden Valley Ranch dry mix                                                                                 1 can water (from the corn can)

Combine all ingredients into large deep pot. Let simmer for about 1/2 hour (or more). You can also add cheese, chips, sour cream, or whatever you wish in the bowl.... Yummy and make a lot!

Cheese Ball ~ KC's Recipe

KC has made this for several potlucks in the same of what holiday we celebrate.

1 (16oz) block sharp cheddar chz, shredded (or bag of pre-shredded chz)                  1 cup mayonnaise                                                                                                                1/2 cup chopped onion                                                                                                       1/4 tsp. salt                                                                                                                           1/4 tsp pepper                                                                                                                     1/2 tsp. cayenne to taste (sometimes a little more than 1/2 tsp)                                1 cup chopped pecans, toasted (or not - who has time to toast??)                               1 (8oz) can whole berry cranberry sauce

Mix the 1st 6 ingredients together until well blended (you can use an electric blender if you want); stir in nuts. Shape mixture into any shape desired (as we have seen). Cover and chill in fridge for 8 hours or up to 2 days. Spoon cranberry sauce over shape or use as garnish. Serve with crackers.

 

Not Yo' Mama's Banana Pudding~Nicole's Recipe

1   12-ounce container frozen whipped topping thawed, or equal amount       sweetened whip
1   14-ounce can sweetened condensed milk
1   8-ounce package cream cheese, softened
2   cups milk
1   5-ounce box instant French vanilla pudding
6 to 8   bananas, sliced
2   bags Pepperidge Farm Chessmen cookies

Line the bottom of a 13x9x2-inch dish with 1 bag of cookies and layer bananas on top.  In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer.  Using another bowl, combine the cream cheese and condensed milk together and mix until smooth.  Fold the whipped topping into the cream cheese mixture.  Add the cream cheese mixture to the pudding mixture and stir until well blended.  Pour the mixture over the cookies and bananas and cover with the remaining cookies.  Refrigerate until ready to serve.
Yield:  12 servings
Preparation time:  30 minutes
